05/02/25 Alpha-Gal Friendly Recipe:

Turkey Taco Fiesta🌮🪅🌮🎉

Ingredients (Serves 4-6):

1 lb ground turkey (double-check for no mammalian additives)

1 packet taco seasoning (check for no dairy or mammalian byproducts; or make your own with chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt)

●12 soft corn tortillas (vegan, no lard)

1 can black beans (rinsed, drained)

1 cup diced tomatoes

●1 avocado, mashed into guacamole (lime juice, salt, optional cilantro)

Shredded lettuce

●Salsa (check for no hidden gelatin or dairy)

Optional: vegan cheese (e.g., cashew-based, confirm no carrageenan for sensitive folks)

Fun extras: sliced jalapeños,🌶🌶 diced pineapple🍍🍍 (for a wacky twist)

Equipment: Skillet, spatula,

Bowls for toppings

Instructions:

●Cook the Turkey: In a skillet over medium heat, cook ground turkey until browned (about 10 minutes), breaking it up with a spatula.

●Drain excess fat.

●Add taco seasoning and ¼ cup water, Simmer 5 minutes until thickened.

●Prep the Toppings:

Set up a “Taco Bar” 🌮🌮 with bowls of black beans, tomatoes, guacamole, lettuce, salsa, and extras.

Label them with funny names like , Tasty Turkey🍗🍗--Avocado Avalanche🥑🥑--or Sassy Salsa💃💃

Warm Tortillas:

Heat tortillas in a dry skillet

Put ingredients into the warm shell & EAT😋😋🌮🌮
